Corn Fritters (Frituras de Maiz)
A great appetiser snack or as a side dish serve with Creole sauce and/or Garlic Dipping Sauce
1 cup Self raising Flour
2 tsp baking powder
2 x 400g cans creamed corn
2 eggs
Salt and pepper to taste
Vegetable oil for frying
Mix all ingredients except oil in a bowl mix until combined season with salt and pepper. Heat oil in a frying pan do not overheat the oil keep it on a medium heat. Pour heaped tablespoons of mixture into the pan leaving some room between each fritter, turning once cook until golden brown on both sides.(makes about 12)
Creole Sauce (Salsa Criollo)
This particular Creole sauce recipe is great fresh accompaniment to fried dishes or as a side dish with meat or fish.
4 vine-ripened tomatoes, diced
1 small red onions, diced
1 large hot chilli, chopped finely ( more if you like it spicy)
¼ bunch Coriander chopped
1/4 teaspoon freshly ground black pepper
1 clove garlic , crushed
1 large lime juiced
Salt and pepper to taste
1 tablespoon extra-virgin olive oil
Place all ingredients in a bowl and mix until well combined. Season with salt and pepper to taste
Latin-Caribbean garlic dipping sauce
This sauce is used in Puerto Rico and Cuba as a condiment for deep-fried plantain chips. It can also be used to flavour fried food or as a marinade for pork.
1 cup Good quality olive oil
8 cloves of Garlic,
2 large limes juiced
½ tsp salt
Place all of the ingredients into a food processor and process until smooth. Add more salt or juice according to required taste.
